Chef's recipe

Roast Rack of Lamb over an aubergine vegetable ratatouille    
(serves 4)

725g 4 racks of lamb with 4 chops each
525g Aubergine (2)
200g Courgette chopped into small cubes
400g Red, yellow and green peppers chopped into small cubes 100g Tomato chopped into small cubes
100g Diced red onion
10g    4 rosemary sprigs
30g    Chopped black olives
10g    Chopped garlic                             
400g Sautéed potatoes (or squashed roast potatoes)
30cl   Olive oil
40cl   Demi-glace
30ml Burgess Mint Sauce
          Salt + Pepper to taste
 

Preparing the meat
Take the racks of lamb and season with course salt, ground white pepper and rosemary. Brown in hot oil olive oil over a low flame and place in the oven preheated to 180º centigrade. Roast to suit your taste (10 minutes for medium rare, 15 for medium and 20 to 25 minutes for well cooked).

Preparing the aubergines
Slice the aubergine lengthways and bake for 5 minutes. Remove the flesh. Heat the olive oil in a frying pan and add the onion, garlic, peppers, courgette, tomato and olives. Mix in the aubergine flesh, season with salt and pepper and cook for 5 minutes.

Roast the potatoes in olive oil with bunches of rosemary

Place the aubergine skin filled with the vegetables on a plate. Carve the lamb chops leaving them on the bone and arrange over the stuffed aubergine. Serve with a demi glace sauce mixed with mint.

Cook's tip: For home use demi-glace is easier bought from the supermarket in powder form. Add 2 soup spoons to ½ litre of cold water, mix well and simmer until the sauces reduces and thickens. Add the mint sauce.

A red wine with a warm bouquet of ripe fruit and spices, which is smooth and peppery on the palate, is the ideal partner for lean dishes such as these lamb chops.
