For reservation purposes, children and infants have the following definition:
Infants: 0 to 2 years old
Children: 3 to 12 years old

For the base
Process the biscuits until they are like small crumbs. Then add the margarine and icing sugar, pulse the ingredients together. Flatten the dough, cutting circular shapes to use as the base of each pudding, putting them in the fridge to set while making the topping.
For the filling
Place the gelatine in cold water. In a separate dish beat the cream gently and then add the condensed milk. Add the mashed curd cheese and mixing everything together thoroughly. Join the passion fruit pulp and lemon juice until it is well mixed. Melt the gelatine and pour it slowly onto the passion fruit mixture until it is all blended.
The raspberry pulp is poured over and around the cheesecake and the perfect accompaniment is a scoop of passion fruit ice cream.
